Ingredients
- 12 eggs
- 10 wheat tortillas
- 1 435 g tin refried beans
- 250 g mushrooms
- 30 g fresh coriander
- 120 g mild cheddar cheese
- 1 green chilli
- 5 spring onions
- Hot sauce
- Salsa
- Butter or vegetable oil
- Greaseproof paper
Optionally:
- Spinach
- Fried bell peppers
- Cooked green lentils
- Shredded cooked chicken
- Queso fresco
Method
- Finely dice the mushrooms
- In a large frying pan, fry the mushrooms in butter or vegetable oil until most of the water has burned off, then decant into a bowl
- Beat the eggs and scramble in the pan until quite dry, leave to cool
- Finely chop the coriander, grate the cheese, de-seed and finely slice the green chilli, finely slice the spring onions, decant the refried beans into a bowl
- Smear the centre of a tortilla with refried beans, then add eggs, mushrooms, cheese, green chilli, spring onions, coriander, salsa and hot sauce
- Roll up the tortilla then wrap in greaseproof paper and freeze
- To reheat, microwave at 800w for ~4 minutes
