Method

  1. Finely dice the mushrooms
  2. In a large frying pan, fry the mushrooms in butter or vegetable oil until most of the water has burned off, then decant into a bowl
  3. Beat the eggs and scramble in the pan until quite dry, leave to cool
  4. Finely chop the coriander, grate the cheese, de-seed and finely slice the green chilli, finely slice the spring onions, decant the refried beans into a bowl
  5. Smear the centre of a tortilla with refried beans, then add eggs, mushrooms, cheese, green chilli, spring onions, coriander, salsa and hot sauce
  6. Roll up the tortilla then wrap in greaseproof paper and freeze
