Elderberry Pie
Ingredients
Filling
- 3.5 cups elderberries
- 1 cup sugar
- 0.25 tsp salt
- 2 tbsp cornstarch or tapioca
- 1 tbsp lemon juice
- 1 tbsp butter
Pastry
- 275 g plain flour
- 110 g butter
- 80 g sugar
- 1 egg
- Milk
Method
Pastry
- Crumb together butter and flour
- Add sugar
- Mix in egg and enough milk to form soft dough
- Roll into ball, refrigerate for 30 minutes
- Roll out and line pie dish, set some aside for lid
Filling
- Mix filling ingredients and simmer to dissolve sugar
- Pour filling into pie shell
- Cut vents in lid
- Bake at 200C for 40-45 minutes
- Serve warm with cream
