Microwave sponge pudding
Ingredients
- 100 g self-raising flour
- 100 g butter
- 100 g caster sugar
- 2 eggs
Lemon variation
- Zest half lemon
- 1 tsp vanilla extract
- 4 tbsp lemon curd
Chocolate variation
- 25 g cocoa powder (remove 25 g self-raising flour)
- 8 squares dark chocolate
Method
- Beat together flour, sugar, butter and eggs in a bowl
- Mix in cocoa powder for chocolate version, or lemon zest and vanilla extract for lemon version
- In a second bowl, dollop lemon curd or chocolate
- Transfer mixture into second bowl
- Microwave for 3 minutes, until fluffy. Rest for a minute, then microwave for another 90 seconds
