Elderberry Cordial

Method

  1. In a saucepan, cover the elderberries with water and bring to a simmer
  2. Simmer for 20 minutes or until the berries have mostly liquidised
  3. Strain the elderberries through muslin, save the juice
  4. For every 500 ml of juice add 300 g of sugar, juice from half a lemon, 0.5 tsp cloves
  5. Add 1 cinnamon stick
  6. Bring mixture to a boil
  7. Boil gently for 15 minutes, stirring regularly to ensure all sugar is dissolved
  8. Strain the liquid again
  9. Let cool
  10. Sterilise glass flip-top bottles
  11. Bottle the liquid
  12. Store bottles in the fridge for up to 3 months or freeze for up to 12 months
