Elderberry Cordial
Ingredients
- Elderberries
- Brown sugar
- Lemons
- Cloves
- Cinnamon sticks
Method
- In a saucepan, cover the elderberries with water and bring to a simmer
- Simmer for 20 minutes or until the berries have mostly liquidised
- Strain the elderberries through muslin, save the juice
- For every 500 ml of juice add 300 g of sugar, juice from half a lemon, 0.5 tsp cloves
- Add 1 cinnamon stick
- Bring mixture to a boil
- Boil gently for 15 minutes, stirring regularly to ensure all sugar is dissolved
- Strain the liquid again
- Let cool
- Sterilise glass flip-top bottles
- Bottle the liquid
- Store bottles in the fridge for up to 3 months or freeze for up to 12 months
