Halloumi with honey and chilli
Ingredients
- 500 g halloumi
- 0.5 lemon
- 6 sprigs lemon thyme
- 2 red chillies
- 1 tbsp extra virgin olive oil
- 2 tbsp clear honey
- 25 g fresh mint
Method
- Preheat oven to 190C
- Cut the halloumi into slices
- Lay the halloumi slices in a baking dish
- Zest and extract juice from lemon
- Strip leaves from thyme sprigs
- Finely slice chillies, optionally remove seeds and inner membrane
- Top the halloumi with lemon zest, lemon juice, thyme leaves, chilli, honey, olive oil, black pepper
- Bake for 25 minutes until golden and bubbling, optionally baste cheese with juice 2-3 times
