Halloumi with honey and chilli

  1. Preheat oven to 190C
  2. Cut the halloumi into slices
  3. Lay the halloumi slices in a baking dish
  4. Zest and extract juice from lemon
  5. Strip leaves from thyme sprigs
  6. Finely slice chillies, optionally remove seeds and inner membrane
  7. Top the halloumi with lemon zest, lemon juice, thyme leaves, chilli, honey, olive oil, black pepper
  8. Bake for 25 minutes until golden and bubbling, optionally baste cheese with juice 2-3 times
