Lemon green bean pasta
Ingredients
- 250 g dried pasta
- 15 green beans
- 0.25 cups olive oil
- 1 brown onion
- 3 garlic cloves
- 1 tsp salt
- 3-4 tbsp lemon juice
- 1.5 tbsp lemon zest
- 0.25 cups walnuts
- Black pepper
Method
- Boil water for pasta. Add salt once boiling. Be conservative with water to make starchy sauce later
- Add pasta and cook to instructions. Add green beans about 2 minutes before pasta is ready
- Finely chop onions, mince garlic, chop walnuts, zest and juice lemon
- Heat olive oil in a pan and slowly cook onions and garlic until translucent
- Add salt to onions and cook for another 30 seconds
- Drain pasta and reserve ~0.25 cups pasta water
- Add pasta water to onions and combine
- Add pasta, green beans, lemon zest, lemon juice to pan and toss with tongs
- Slowly thicken sauce, add more salt and lemon juice as needed
- Garnish with lemon zest and walnuts
