Lemon green bean pasta

Method

  1. Boil water for pasta. Add salt once boiling. Be conservative with water to make starchy sauce later
  2. Add pasta and cook to instructions. Add green beans about 2 minutes before pasta is ready
  3. Finely chop onions, mince garlic, chop walnuts, zest and juice lemon
  4. Heat olive oil in a pan and slowly cook onions and garlic until translucent
  5. Add salt to onions and cook for another 30 seconds
  6. Drain pasta and reserve ~0.25 cups pasta water
  7. Add pasta water to onions and combine
  8. Add pasta, green beans, lemon zest, lemon juice to pan and toss with tongs
  9. Slowly thicken sauce, add more salt and lemon juice as needed
  10. Garnish with lemon zest and walnuts
