Nut Roast
Ingredients
- 200 g spinach
- Mixed nuts:
- Cashew
- Pecan
- Walnut
- Macadamia
- Pine
- Chestnut - Lots of these
- 1 Onion
- 1 Carrot
- 1 tin chopped tomatoes
- 0.5 jars sundried tomatoes
- 1 or 2 eggs
- 100 g Gruyere cheese
- Herbs
- Garlic
- Bouillon
- Salt
- Black pepper
- Breadcrumbs
Method
- Wilt the spinach
- Preheat oven to 200C
- Roughly chop the chestnuts
- Blend the other nuts
- Chop the carrot and onion
- Grate the cheese
- Chop the garlic
- Finely chop the herbs
- Mix everything together in a large bowl
- Grease a loaf tin, press in the mixture, cover with tin foil
- Bake for ~1 hour, remove tin foil for last 10 minutes
