Potato and carrot latkes

Method

  1. Peel and coarsely grate the potatoes, carrots and onion
  2. Squeeze the water out of the potatoes, carrots and onion using cheesecloth
  3. Mix the potatoes, carrots, onion, flour and eggs
  4. Heat 1 cm of vegetable oil in a frying pan until smoking hot
  5. Form 12 balls from the mixture, then press down into the pan
  6. Fry for 1-3 minutes on each side, then remove and pat dry with paper towels
