Spiced chickpeas
Ingredients
- 400 g tin chickpeas
- 75 g queso fresco
- 0.5 brown onion
- 1 green bell pepper
- 1 thumb ginger
- 0.5 habanero chilli
- 3 cloves garlic
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp turmeric
- 2 tbsp olive oil
- Salt to taste
Method
- Finely chop onion, mince garlic, chop green bell pepper, mince ginger, mince habanero chilli.
- Heat olive oil to medium heat in a pan
- Add the onions and cook for about 5 minutes until softened.
- Add garlic, pepper, ginger, chilli, cumin, paprika, turmeric, mix and cook for 2-3 minutes.
- Add the chickpeas and season to taste, then cook, stirring constantly, for about 10 minutes until chickpeas are soft and creamy inside.
- Take off the heat and leave to cool before mixing through the queso fresco, then serve.
