Method

  1. Finely chop onion, mince garlic, chop green bell pepper, mince ginger, mince habanero chilli.
  2. Heat olive oil to medium heat in a pan
  3. Add the onions and cook for about 5 minutes until softened.
  4. Add garlic, pepper, ginger, chilli, cumin, paprika, turmeric, mix and cook for 2-3 minutes.
  5. Add the chickpeas and season to taste, then cook, stirring constantly, for about 10 minutes until chickpeas are soft and creamy inside.
  6. Take off the heat and leave to cool before mixing through the queso fresco, then serve.
