Ingredients
- 1 large red onion
- 175 ml apple cider vinegar
- 60 ml water
- 1 tsp salt
- 2 tbsp brown sugar
- 1 tsp mustard seeds
- 2 bay leaves
- 0.5 tsp chilli flakes
Method
- Heat the vinegar, water, salt, brown sugar, mustard seeds, bay leaves and chilli flakes in a saucepan until boiling, then simmer for 5 minutes.
- Finely slice the red onion and transfer to a glass container.
- Poor the liquid over the onions and mix thoroughly.
- Leave until cooled, then seal container and refrigerate.
