Baked feta with lentils
Ingredients
- 200 g block of feta
- Half a red onion
- 1 red chilli
- 2 tbsp olive oil
- 1 lemon
- 250 g cooked puy lentils
- Handful of fresh mint
- Handful of fresh coriander
Method
- Heat oven to 200C
- Cut the feta in half and sit each block on a piece of foil.
- Finely slice the onion. Finely chop the chilli.
- Divide the onion, chilli, and olive oil between the two blocks of feta. Add a squeeze of lemon juice. Crimp up the sides of the foil to make a boat.
- Bake for 15-20 minutes until the feta has softened or started to turn golden on the edges.
- Heat the lentils, then stir in the mint and coriander.
- Sit the feta on top of the lentils and pour over the juice from the foil boats.
- Top with remaining herbs and another squeeze of lemon juice.
- Serve with crusty bread.
